There’s something lovely about a wee stop in Wales, just to round off the trip with a spin through the beautiful valleys and this time we discovered the BEST carrot cake in the world, in a tiny bakery in Betws-y-Coed. Thankfully, it’s easier to go back there for carrot cake than Belgium for beer, or France for pastries or Italy for gelato… but we just might anyway!
